20 ml | FRESH LIME JUICE |
8-12 ml | SUGAR SYRUP* (to taste) |
Shake the living hell out of it. This drink needs a little extra dilution, extra aeration and to be blisteringly cold. The simplest of drinks, but it is in my all time hall of fame. A real test of a rum; with just two other ingredients there’s nothing else to hide behind. The lime sharpens and brings out the character of the rum, and it's then simply balanced to even up the sourness. There's a good reason seasoned drinker extraordinaire Ernest Hemingway put away so many of them, and had a variant named after himself. For this drink, disregard what I said about that helpful ratio (rules are meant to be broken). The daiquiri I love works best somewhere near the recipe above…
